Ingredients
- 4 boneless, skinless chicken breasts (about 1.5-2 lbs)
- 1 cup mayonnaise (full-fat for best results)
- 1/2 cup freshly grated Parmesan cheese
- 1 teaspoon seasoned salt
- 1/2 teaspoon black pepper, freshly ground
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with cooking spray or butter.
- Pat chicken breasts completely dry with paper towels and arrange in a single layer in the prepared baking dish, ensuring they don’t overlap.
- In a medium mixing bowl, combine mayonnaise, grated Parmesan cheese, seasoned salt, black pepper, garlic powder, and onion powder. Whisk until smooth and well combined.
- Using a spatula or the back of a spoon, generously spread the mixture over the top of each chicken breast, creating an even 1/4-inch thick layer that covers the entire surface.
- Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) when measured at the thickest part. The coating should turn golden brown and slightly bubbly.
- Optional: Switch oven to broil for the final 2-3 minutes for an extra-crispy top, watching carefully to prevent burning.
- Let chicken rest for 5 minutes before serving to allow juices to redistribute.
- Garnish with fresh parsley and serve hot with your favorite sides.
Notes
Substitutions:
- Greek yogurt can replace mayonnaise for a lighter version
- Chicken thighs work great and are even more forgiving (cook to 175°F)
- Use Pecorino Romano instead of Parmesan for sharper flavor
Tips:
- Always use freshly grated Parmesan for best melting and flavor
- Let chicken sit at room temperature 15-20 minutes before coating for even cooking
- Don’t skip the 5-minute rest time – it keeps the chicken juicier
Storage:
- Refrigerate in airtight container up to 4 days
- Freeze up to 3 months (wrap individually in plastic wrap, then foil)
- Reheat in 350°F oven for 10-15 minutes for best results
