Ingredients
For the Casserole Base:
- 2 pounds ground beef (80/20 blend)
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 cup sour cream
- 1 cup whole milk
- 2 cups shredded cheddar cheese
For the Topping:
- 32 oz frozen tater tots (one standard bag)
- 1 cup shredded cheese for topping
- 2 tablespoons butter, melted
- Salt, black pepper, garlic powder, and paprika to taste
- Fresh parsley or chives for garnish
Instructions
- Prepare and Preheat: Preheat oven to 375°F (190°C) and position rack in center. Lightly grease a 9×13-inch baking dish with cooking spray or butter.
- Brown the Beef: Heat a large skillet over medium-high heat. Add ground beef, breaking into crumbles with a wooden spoon. Cook 6-8 minutes until no pink remains. Drain excess fat, leaving about 1 tablespoon.
- Build Aromatic Base: Add diced onion to browned beef and sauté 3-4 minutes until softened. Stir in minced garlic and cook 30 seconds until fragrant. Season generously with salt, black pepper, and garlic powder.
- Add Vegetables and Cream: Add frozen mixed vegetables to skillet and stir to combine. In a separate bowl, whisk together cream of mushroom soup, sour cream, and milk until smooth. Pour over beef mixture, stirring until evenly coated. Simmer 2-3 minutes.
- Assemble Casserole: Transfer beef mixture to prepared baking dish, spreading into an even layer. Sprinkle 2 cups shredded cheddar cheese over the top.
- Add Tater Tots: Arrange frozen tater tots in a single, tightly-packed layer across entire surface. Brush tops with melted butter and sprinkle with paprika.
- Bake: Bake uncovered 25-30 minutes until tater tots are golden brown and crispy. In final 5 minutes, sprinkle remaining cup of cheese over tots and return to oven until melted and bubbly.
- Rest and Serve: Remove from oven and let rest 5 minutes. Garnish with freshly chopped parsley or chives before serving.
Notes
Substitution Tips:
- Use ground turkey, chicken, or plant-based meat instead of beef
- Replace sour cream with Greek yogurt for added protein
- Swap cream of mushroom soup with cream of chicken or homemade béchamel
- Try sweet potato or cauliflower tots for healthier alternatives
