  • Total Time: 15 minutes
  • Yield: 4 servings

Ingredients

  • 1 lb (450g) lean ground beef (or ground turkey or plant-based crumbles for a lighter or meatless version)
  • 1 tablespoon olive oil (avocado oil works beautifully, too)
  • 1 small yellow onion, finely chopped (or red onion for sharper flavor)
  • 2 garlic cloves, minced
  • 1 jalapeño, finely chopped (omit for mild heat or substitute with poblano for smoky notes)
  • 2-3 tablespoons taco seasoning (homemade or store-bought)
  • Salt and fresh cracked pepper, to taste
  • 8 small soft corn or flour tortillas (gluten-free? Use corn or certified GF options)
  • 1 large ripe avocado, sliced or diced
  • 1 cup shredded lettuce (romaine or iceberg)
  • 1 cup cherry tomatoes, quartered
  • ½ cup sour cream or Greek yogurt
  • ½ cup shredded cheese (cheddar, Monterey Jack, or vegan cheese)
  • 1 small handful fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Sauté the Aromatics
Heat olive oil in a large skillet over medium-high heat. Add the chopped onion and cook for 2 minutes until softened and fragrant. Add the minced garlic and chopped jalapeño, stirring for another minute until aromatic.
Tip: For a milder heat, remove jalapeño seeds before adding.
  2. Brown the Beef
Add the ground beef to the skillet, using a spatula to break it up into crumbles. Season immediately with taco seasoning, salt, and pepper. Cook for 5-6 minutes until browned and cooked through — you’ll notice the spices releasing those mouthwatering aromas! If there’s excess fat, drain briefly on paper towels for lighter tacos.
  3. Warm the Tortillas
While the beef cooks, warm the tortillas on a dry skillet or directly over a low gas flame for a few seconds per side. Wrap them in a clean towel until ready to serve to keep them soft and pliable.
Pro tip: Warming tortillas makes them less likely to tear and enhances flavor.
  4. Assemble the Tacos
Spoon the savory beef mixture onto each warm tortilla. Top with shredded lettuce, cherry tomatoes, avocado slices, sour cream or Greek yogurt, shredded cheese, and fresh cilantro. Give each taco a generous squeeze of fresh lime.
Personalized tip: Let everyone assemble their own — perfect for picky eaters or family fun!
  5. Serve Immediately
Serve the tacos immediately with extra lime wedges on the side.

Notes

  • Protein Substitutions: Swap ground beef for ground turkey, chicken, lentils, black beans, or plant-based crumbles.
  • Dairy-Free: Use vegan cheese and dairy-free yogurt or omit both and add extra avocado for creaminess.
  • Keto/Low-Carb: Serve taco filling over salad greens or use low-carb tortillas.
  • Storage: Store cooled beef in an airtight container in the refrigerator for up to 4 days. Store toppings separately to maintain freshness.
  • Make-Ahead: Cook beef mixture up to 2 days in advance; reheat gently on the stovetop before serving.
  • Freezing: Freeze cooked beef in freezer-safe containers for up to 2 months. Thaw overnight and reheat.
  • Extra Topping Ideas: Pickled red onions, sliced radishes, roasted corn, diced mango, or hot sauce.
